Cooking with Cannabis: Easter Treats Part 1

Easter is fast approaching, and for many, it’s a day of chocolate, cake, roast dinners, and all sorts of other delicious treats. I’m sure people think it’s time for other things too, but I’m really just on the food side. We’ve covered a lot of delicious food in our “Cooking with Hemp” series, so we’re going to use some of the skills we’ve learned to make some truly amazing Easter treats. As always, I go for a sweet and savory combination so everyone has something for them. As always, I’ll give a brief overview so you can make your own cannabis butter and oil.

cannabis base

Making your own cannabis butter is easy if you take a little time. You need half an ounce of weed, not too fine or it will slip through the net. Then all you need is a glass baking pan and an oven. What you do is spread your weed out in a baking pan and once it’s preheated to around 100C, put it in the oven. Leave it in for 20 to 40 minutes, just keep checking it and shuffling every 10 minutes. When it turns a dark brown-green, your weed is ready.

butter:

For the butter, you will use decarboxylated weed and 226 grams of butter. Put the butter in a saucepan with 1 cup and 1/2 cup water and let it melt. When it melts, add the weed and cover and let it simmer for 4 hours. Then pull it taut with some cheese cloth and let it cool.

Oil:

One cup of olive oil is needed for every 3 grams of weed. We do the same thing with butter, put your ingredients in a saucepan, cover and heat for 20 minutes. Then lift the lid, stir, and simmer for another 30 minutes. Strain through a cheese cloth and let cool.

Easter Egg

Obviously, we should start with the best part of Easter snacks, the Easter eggs. When I was a kid, I always thought these were a bit of a con, because it looks like you get a lot of chocolate and all you get is a shell. You know…good, but…anyway, move on. You will need:

  • 35 g cannabis butter
  • 128g chocolate of your choice

Yes, that’s all you need! Oh, and apparently an Easter egg stencil.

So let’s move on to the method:

You’re going to break your chocolate and put it in a bowl with your hemp butter, preferably a glass bowl, because we’re going to be making a Bain Marie.

Get yourself a pot, add half the water, bring it to a boil, and place a glass bowl full of ingredients on it.

Let the contents of the bowl melt, making sure they don’t burn or bubble, and continue stirring with a rubber spatula.

Remove the bowl from the heat and let it cool, continuing to check with the thermometer until the chocolate/butter reaches 35 degrees Celsius.

The egg mold has two sides, so carefully scoop the cooled chocolate to one side and run a knife around the edges. Repeat for the second side of the mold.

Pop out some greaseproof paper, place the mold face down on it, and let it sit for about 15 minutes, until the chocolate is set.

When you do, melt the last piece of chocolate again, which you will use to brush the edges and seal the eggs together. After removing the egg edges from the mold and pressing the edges together, simply coat the edges of the eggs.

Gosh, once it’s hardened, you have your special Easter egg.

These are my favorite Easter treats and it makes it tricky to put weeds in them because I find it hard to stop eating them. Oh well, let’s just hope I think the best, if you have a couple of people coming over, probably do these so you can’t go on.

You will need:

  • 50 g cannabis butter
  • 225g pure chocolate
  • 2 tablespoons golden syrup
  • 75 grams cornflakes (or similar grains sold by less problematic brands)
  • A package of mini eggs

method:

Buy yourself a cupcake tin and line it with a cupcake crust.

Get yourself a Bain Marie with a pot, boiling water, and a glass bowl with a sear on it.

Combine the syrup, chocolate, and hemp butter in a bowl and let them melt into a lovely sticky soup.

Once the mixture is silky, you can remove it from the heat and stir in the tortilla chips, making sure they are all fully covered.

Use a nice large spoon to separate the mixture into the paper crust, dipping the center slightly.

Then take a few of your baby eggs and place them in the center of each nest.

Then all you need to do is put them in the fridge for an hour and you’re done! Probably one of the easiest Easter treats of the year.

Easter Sugar Cookies

It’s a fun group baking option because you can get all kinds of fun stuff to decorate your holiday cannabis cookies.

You will need:

  • 50 g cannabis butter
  • 175g unsalted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 330g plain flour
  • 225g caster sugar
  • 2 teaspoons baking powder

method:

Preheat oven to 180 degrees Celsius.

Put the butter and sugar in a bowl, mix well, then add the vanilla and eggs.

In another bowl, combine dry ingredients like flour and baking powder.

Then add it to the wet bowl a little at a time until you have a nice stiff dough.

Divide the dough into small pieces, roll out, and cut into the shape you like. Maybe get some bunny shapes etc to make it more Easter.

Bake for 8 – 10 minutes, then let them cool on a rack until they’re ready to decorate.
